Orange Chicken

Abby loves the Orange Chicken from Panda Express. Everytime we are in St. George she begs us to go there. Well.....she liked this one even better!!!

2 lbs of chicken cut into bite size pieces
1/2 c. cornstarch
1/4 c. flour
1 egg
oil
1 tsp minced garlic
1 tbs minced ginger (I use the kind in a jar for this and the garlic as well)
salt & pepper
2 green onions sliced

The Sauce:
1 1/2 tbs soy sauce
1 1/2 tbs water
5 tbs sugar
4 tbs white vinegar
zest of one orange

in one bowl mix cornstarch and flour and salt/pepper(I used quite a bit). In second bowl wisk one egg. On the stove heat 1 cup of oil in skillet. Dip chicken into dry mixture and then into egg mixture and place in skillet. fry until crispy. (Did I mention it isn't a healthy recipe which is why it tastes sooooo good!) Remove chicken from pan and place on a plate lined with a paper towel. put ginger and garlic into skillet and fry for one minute. Add sauce to the skillet and bring to a boil. Add chicken back into the mixture and green onions if desired. Serve over rice.

Enjoy and try not to feel guilty!!!!
