Deb's Fried Rice

3 eggs, lightly beaten
1/4 tsp. salt
1/8 tsp. pepper
3 tsp. vegetable oil
1/4 lb. bacon
4 cups cooked white rice (approx. 1 1/3 uncooked), cooled
1pkg. (10 oz.) frozen peas, thawed
1/3 cup chopped green onions (white part and 1 in. of green)
1/3 cup soy sauce

1. Season eggs in bowl with salt and pepper
2. Heat 1 tsp. of the oil in small skillet over medium heat. Add eggs; dip pan from side to side to cook eggs evenly, about 3 min. Flip eggs. Cook 1 min, trying not to brown eggs. Remove eggs to work surface; let cool; roll up jelly-roll style. Cut into thin slices; set aside.
3. Cook bacon in large skillet until crisp; about 5 minutes. Drain on paper towel. Crumble bacon into small pieces. Reserve bacon fat.
4. Add remaining 2 tsp. oil to skillet with bacon fat; heat over medium heat. Add rice, breaking up any clumps and tossing lightly to coat with oil. Add cooked bacon, green peas, onion, egg and soy sauce; cook, stirring constantly, until heated through, 2 to 3 minutes.(I usually add a little ham also.)Serves 4.
