Tempura batter

If you haven't tried the Orange chicken yet, you have to! My friend Deb gave me this recipe because she thought it might be easier (and less messy) than the batter with the orange chicken recipe. I have to agree, the less double dipping the better! It will also work great with anything else you want to fry up. You know, like all those Zucinni we've been growing.

3/4 cup corn starch
1/4 cup flour
1 tsp. baking powder
1/2 tsp. salt
1/4 tsp. pepper
1/2 c. cold water
1 egg, slightly beaten

Dip chicken in batter and fry in hot oil. (I also use this batter for breaded mushrooms and I especially like to dip zucchini rounds in it and then dip the fried zucchini in nacho cheese sauce - not the healthiest thing, but very delicious!)
